Aunt Helen's Chocolate Chip Cookies

Cookies cookies cookies... love 'em. After making banana cake w/ cream cheese frosting Sunday I decided to take a day off from making sweets. I whipped up my aunt Helen's chocolate chip cookie recipe, and surprise surprise, it turned out perfectly. Such a staple recipe!
I am trying one new thing... I baked 2 pans and am going to freeze the rest. I made dollop cookies and will freeze them until I decide to bake them later. I hope they turn out well and don't dry out or get freezer burn!

Black Bean Spinach Turkey & Rice

Because my big batch of Black Bean Veggie Burgers make nearly 10 patties I decided to make a dinner out of them... It was easy peasy and completely different than the patties.

Steam brown rice and sautee 2 veggie burgers, evoo, s&p, cumin, garlic powder, 1 big glug of salsa, and a few strips of roasted turkey. Heat until sizzling. Add your veggie and turkey mixture to your rice and melt a little cheese on top. I will definitely be making this again!

Black Bean Veggie Burgers

I can't get enough of these burgers!!
They are so healthy and still pretty savory tasting. After whipping up a burger last week with leftovers I made a full batch and perfected my recipe... its a great way to use up random things in your 'frig!
Cut and puree 4 large carrots, 1/2 green pepper, 1/2 onion. Sautee and add s&p, cumin, and garlic powder. Mix veggies with 1 box of frozen spinach and a can of mashed kidney beans. Stir in one whipped egg and form 'patties.'

Put on the griddle with a little evoo

Flip after they are browned (the middles should dry out a bit)
I 'toast' a Pepperidge Farm Deli Flat on the griddle and serve provolone cheese on top. ENJOY!


Black Bean Veggie Burgers

Its been a while... ciao!

I whipped up a great dinner last night in an effort to use up a few things that were just sitting in the fridge....

black beans, spinach, corn, sauteed green peppers and mushrooms, cumin, garlic, salt and pepper and an egg...... grilled and served on a toasted bun. yum! I'll have to remember this recipe!
