Black Bean Veggie Burgers

I can't get enough of these burgers!!
They are so healthy and still pretty savory tasting. After whipping up a burger last week with leftovers I made a full batch and perfected my recipe... its a great way to use up random things in your 'frig!
Cut and puree 4 large carrots, 1/2 green pepper, 1/2 onion. Sautee and add s&p, cumin, and garlic powder. Mix veggies with 1 box of frozen spinach and a can of mashed kidney beans. Stir in one whipped egg and form 'patties.'


Put on the griddle with a little evoo


Flip after they are browned (the middles should dry out a bit)
I 'toast' a Pepperidge Farm Deli Flat on the griddle and serve provolone cheese on top. ENJOY!
