Summer Stew

Although its a scorcher today and it is the beginning of a hot summer month, this creamy fresh vegetable stew absolutely hit the spot!
My—oh—my! My mom outdid herself tonight! She is simply the best. The best baker (buttermilk brownies, anyone?!), the best cook, the best listener, the most supportive, loving, truly fantastic mom. This stew was no different. Just awesome!
Garden green beans, carrots, and hearty potatoes in a creamy and perfectly thick gravy. How does it get any better?
I couldn't wait to dig in to my bowl of soup! First, though, I grabbed a huge pile of green grapes, and a few dippers for red pepper hummus. Cukes, tortilla chips, and carrots work so well with the hummus! You can chomp forever!
Refreshing. Filling. Light.

Summer Sandwich Smearings

Who doesn't love a BLT with hearty summer tomatoes and a smearing of mayo?

I'm right there with ya.
but there are also many healthier, more flavorful, and more creative options to make your summer sandwiches slide down a little easier!

Here are a few to try this summer.

hummus
1. Toast bread—the key to a great sammich
2. Spread a layer of homemade hummus (mine is always thicker because I don't add tahini)
3. Layer with fresh greens, crunchy cukes, tomatoes, peppers, and carrots.
4. eat a peach. chop down. :)Other smearings for you to try...

guacamole—what about with a grilled portabello mushroom and sundried tomatoes
greek yogurtplain flavor tastes just like sour cream... why not try it with a sprinkle of dill or blend of basil on a BLT
smashed bananaon a peanut butter sandwich?! yum!
pesto—straight up pesto. it'd definitely pack a punch on a simple tomato sandwich or roast beef and balsy vin reduction drizzle
